Irish Soda Bread

Recipe of the Month - March

Traditional Irish Soda Bread

4 cups flour
1 tsp baking soda
1 tsp salt
14 oz buttermilk

Preheat oven to 425 degrees. Lightly grease and flour a cake pan. In a large bowl, sieve and combine all the dry ingredients. Add the buttermilk to form a sticky dough. Place on a floured surface and lightly knead (too much allows the gas to escape). The dough should be similar to sticky biscuit dough.

Shape into a round, flat shape and place in the prepared cake pan. Cut a cross in the top of the dough. Cover the pan with another cake pan and bake for 30 minutes. Remove cover and bake for an additional 12-15 minutes. Remove from oven and cover with a clean tea towel, lightly sprinkled with water to keep the bread moist. Store in a plastic bag when completely cooled. Delicious served warm with butter and jam!
